We were invited to one of Manila’s iconic dining spot, Café Ysabel, for a truly unique full steakhouse experience. Renowned Filipino culinary artisan Chef Gene Gonzalez introduced The Secret Six—steak cuts once treasured and kept by butchers for themselves, rarely appearing in everyday dining. This event was organized by the steak’s distributors, The Butcher’s Secret.

During a two-hour immersive meal, Chef Gene and his skilled kitchen team offered a culinary journey showcasing these six rare cuts:

Bavette – a favorite among French chefs, also known as flap steak, best savored with rubs and marinades.

Ribeye Cap – the “crown jewel” of the ribeye, renowned for its buttery richness.

Delmonico – the “rebel ribeye,” celebrated for its deep, bold taste.
Picanha – famously called the “Queen of the Grill.”

Flat Iron – named after its shape, it’s as flavorful as chuck and as tender as tenderloin.
Hanging Tender – a hidden treasure hanging from the diaphragm, also called the hanger steak.

Aside from the steak, Cafe Ysabel’s excellent sides and sauces were also served to build up the excitement for the main course, all impeccably prepared by the team at Cafe Ysabel. Of course, Chilean red wine from Court Rollan was paired perfectly for its rich and fruity aroma and flavor.
